    Poor Sam. He will forever have the “fine dressing” asterisk next to his name at Thanksgiving. So glad you are able to laugh and keep it all in perspective . . . especially since you are the only person who was the least bit disappointed =]

    The terms you are looking for are ‘Umami’ and ‘Fond’. Unami refers to the savory flavors in food. Mushrooms, tomatoes, worchestershire sauce, all add Unami. It’s sometimes called the “fifth taste”. The other word ‘fond’ refers to the browned bits of food that have released their sugars and thus caramelized on the bottom of the pan. This is what I get from hours of watching America’s Test Kitchen. Happy advent? How about hope your Advent is introspective? Or maybe “Advent – It gets better!”

        This is one of my favorite memories. We were spending Christmas at Mother’s. She had baked a country ham for the event. Hers were the best ever. There was no room in the fridge for it so she put it on the screened-in porch on the little red table to await the next day’s dinner. Next morning as we were sitting at the table looking out the large kitchen window-created so that Mother could watch the birds feeding at her feeders-we noticed a large dog across the gulley-where Miss Byde used to live-proudly carrying something huge in his mouth. Yep-you guessed it-our Christmas ham!!! Don’t know how she compensated for the main dish but the dog had the best Christmas ever.
